Pablo Ranea carries Mendoza with him: a chef who cooks with smoke and embers, then plates with a quiet, exacting hand. Salsa criolla and llajua, grilled octopus, handmade orecchiette, Uruguayan skirt steak. Argentine soul, Valley Center roots.

A handful of times a season, Pablo sets a single long table for a multi-course, experiential dinner. Live fire, Hill Top pours, and a menu you won't find any other night. Few seats. No repeats.
